Every counter and every crew member leaves from one kitchen in the Tricity. A Ludhiana or Patiala date is a drive; a Shimla or Kasauli date is a plan made days ahead, with the crew on site the night before.

If you are booking this for a client, the hill date is the line on the sheet you check twice: the crew has never seen the ground, and nothing missed can be sent up after them.
We take one wedding a date, so the crew that travels up is not being split with anything else that weekend, and Sumit oversees every hill date personally.
