Themed setups

Every themed food counter is a place, not a menu.

Eight food streets rebuilt inside your venue, each dressed, drawn and lit as the city it comes from. Built for weddings, sangeets and receptions.

The eight setups

Pick a city. We build it.

Every concept below is one of ours: a designed menu section with its own dishes, its own illustration and its own counter dressing. Nothing here is a mood board. Each one has been built and served.

01 Banaras Tamatar chaat, palak patta and kulhad chai off the tawa Morning functions · mehendi · vidaai
02 Bombai Vada pav, bhurji pav and bhel griddles after dark Sangeet · cocktail nights
03 Purani Dilli Rajkachori, matar kulcha and bedmi poori under the arches of an old Delhi gali Receptions · family lunches
04 Lucknow Meetha Makhan malai, shahi tukda and kulfi, plated slowly and last The dessert course, anywhere
05 Amritsar Amritsari kulcha, chole and kulhad lassi, the heartiest counter we run Winter weddings · daytime functions
06 Madras Dosa and appam griddles with filter coffee Breakfast services · corporate days
07 Naya Bazaar Avocado sev puri, tacos chaat and nachos chaat Cocktail evenings · launches
08 24/7 Chai Tapri Kulhad chai, bun maska and maggi while every other station sleeps Late night sangeet · any event that runs past midnight

The build

What a themed live counter looks like on the night.

Photographed at real functions, not rendered. The dressing changes with the city; the light is always ours.

01 The full line at evening service, jaali arches, the cart build, and a canopy of lights overhead.
02 One station up close, the jaali arch, brass serveware, and a dish card for every bowl.
03 The wooden tapri build at a hill venue, kulhads stacked, pines behind the sign.
04 Steamers at blue hour, the same wooden build, dressed for a different menu.

The builds travel. The tapri that stacks kulhads in the pines carries a steamer station just as well. The crew, the lights and the dressing go up wherever the venue is.

Combinations

Setups combine.

Pick one for a function, or run two across a day, a Banaras morning and a Bombai night at the same wedding.

A wedding, across functions A Banaras morning for the mehendi, Bombai for the sangeet, and Lucknow meetha to close the reception.
A corporate day Madras at breakfast, Bombai at lunch, griddles that keep a queue moving.
A cocktail evening Naya Bazaar beside Purani Dilli, one counter for the photographs, one for the plates that empty first.
Any event over several days The 24/7 Chai Tapri stays open after every other counter has closed, for whoever is still up at three in the morning.

Next step

Bring a city to your function.

If you are booking this for a client, you need the technical rider before setup day, not on it. So it is here: one 16A point per counter, gas is arranged as part of the setup, generator load is agreed in writing, allow roughly 8 by 4 feet of floor per counter, and a themed build takes half a day to go up. Enough to plot the counters on the floor plan and back time the build while you are still shortlisting.

Every setup is quoted per event, in writing. Counter dressing, live crew, setup and clearing are part of the build. We put these counters up across the Tricity, Chandigarh, Mohali, Panchkula, and out through Punjab, Haryana and Himachal. Tell us the date, venue and headcount, and we reply within 24 hours.
